Recipe: Potato Vegetable Dumplings

You really have a taste for a vegetarian dish? Then we recommend our signature dish from the Schönberghof, the hotel right on the Red Bull Ring: potato vegetable dumplings with sour cream dip.

The local ingredients for the dish include potatoes from the Murtal valley farmers, sour cream from the local dairy, eggs from "Herk" and, of course, Styrian pumpkin seeds. To make this dish taste particularly good, the many fresh herbs in the potato batter should not be missed.

Potato batter

  • 600 g potato
  • 80 g leek
  • 300 g of root vegetables
  • 100 g peas
  • salt
  • garlic
  • herbs


  • 50 g flour
  • 4 eggs
  • 60g oatmeal
  • 30 g breadcrumbs
  • 20 g sunflower seeds
  • 20 g pumpkin seeds


Boil potatoes in salted water, squeeze through a ricer and let cool.
Mix Brunoise sliced root vegetables with leek and peas. Season it afterwards with salt, garlic and many fresh herbs.
Make patties, fry in flour, egg, crumbs (oatmeal, breadcrumbs, sunflower seeds and pumpkin seeds) and bake in butter lard.

Serve them with a sour cream dip. Simply mix up sour cream, salt, pepper, garlic and herbs.
